Located at VILA VITA Parc Resort & Spa, Atlântico restaurant has reopened with chef João Viegas heading the kitchen, and remains highly focused on the Algarve, on its roots and gastronomic traditions, with a concept that recreates them in modern way.
Originally from Algarve, Chef João Viegas brings a rich background gathered from experience in several prestigious restaurants, such as São Gabriel*, in the Algarve; El Celler de Can Roca** and Mugaritz**, in Spain, and Central Restaurante, in Peru.
To praise the richness and diversity that exists in the small geographical area of the Algarve, Chef João Viegas presents the best of the mountain and the coast in a sustainable and balanced menu, essentially vegetable-based, where the protagonist is not the protein - although it is included according to seasonal availability -, but the vegetable and the carbohydrate. Highlights include salt crust roasted beetroot and earthy gazpacho; the Bluefin tuna, Portuguese heirloom tomato or the vegetable broth boil and textures of turnip.
Priority is given to 100% regional organic products of each season, with a focus on authentic, original ingredients from local farmers, fishermen and producers.
